If you really want to start in Vienna walk through the Alps to Italy and either (a) along the Italian Alps to South France (E10) to Nice and take a Bus (Euroline etc) to the Pyrenees in Spain to skip France. Then walk through the Pyrenees back (E3 or E9).
Or (b) through Slovenia to Croatia along the E6 (If you start in July, the heat can be a problem) and go back with Train/Plane.
