For instance on some older houses there is still slate roofing that uses lead flashing instead of copper flashing. You'd not want drink water from that. Most regular metal roofing is zinc-coated. Rusty metal roofing will have red rust leaching into the water. And, of course there's all the pollution like pollen, spores, soot, bird crap, dead insects, and whatever landing on the catchment system. If you are catching water off a safe surface, filtering, and pasteurizing the water then you'd only need to worry what you are downwind from, like pollution spewing factories/plants. FYI you can use an inline UV filter/UV pasteurizer/UV sterilizer to kill everything after it has been filtered. Just don't get one that is less than 10 watts.
If you are going to worry about plastic, the entire catchment system will need to be plastic-free. The main concern there will be the storage tank and the water lines going from the storage tank to the faucet. In those areas the water will sit for long amounts of time where chemicals can leach into the water. Plastic before the storage tank won't matter as much.
