I backpacked most of the entire summer, my diet consisted of:
3x Oatmeal for breakfast + cliff or larbar
Lunch was tortilla always, changed between these daily

Dinner was always some sort of starch, usually Knorr pasta side with a very small can of chicken or from a bag. Sometimes rice n' beans or mashed potatoes (gets boring after a while desu)
gorp for snacks and bars on the side.
