I've never liked either of your options. Gas canisters are bulky, somewhat dangerous, and idiotically over-priced for what you're getting. Hex tabs are similarly bad, from a bulk/price standpoint, but at least you don't have to worry about hauling pressurized gas with you in the woods.
I always carry an alcohol stove, as alcohol is a liquid, safe, cheap, easily transportable fuel. Don't feel like making your own alcohol stove out of a can? Don't. Buy one. Esibit and Trangia both make a viable alcohol stove for about $12-15.
