Don't know about vikings but i know alot about the anglo saxons (same thing basically)
Most anglo saxon hunters, scouts, rangers, trackers, etc would have carried a seax (knife) axe, bow and arrow and some snares for food gathering, fur blankets, rope, a flint and steel set for making fire and some tinder probably. Many might have carried whetstones as well for sharpening. They also had leather waterskins and didn't need to boil their water (forest and uplands streams are pretty clean and you develop an immunity to bad diseases in water after a while). Their clothing would have been good for the wet forests of england, so they mainly wore leather and wool and sometimes fur. They all would have had a leather bag to carry all their stuff in and probably slept in natural shelters (caves, fallen trees, overhangs, etc) If you have any more questions just ask me.
