I hilled up my Yukon gold potato plants yesterday. Now they are ready for heavy mulching. I've been hitting the lambsquarters pretty hard as a potherb. They are so delicious.
General simple recipe I'm using is,
rinsed and chopped lambsquarters (leaves and non-woody stems)
bit of meat for flavoring (ham usually)
salt
butter
black pepper
hot pepper (I use powdered cayenne and Hungarian wax)
water
Boil the lambsquarters just until they start to get past the bright green stage. Drain it and toss out that water (it'll be full of oxalic acid). In another pot boil the salt, butter, spices, and meat until meat is fully cooked. Add the lambsquarter to the pot, serve.
Essentially, you can use lambsquarters in place of collards and spinach in most recipes.
