I use a 30€ chopper made from 420 for years now and it does just fine.
8cr13MoV is awesome, 12c27 is awesome and 440c is all I wished for. The reputation of inexpensive stainless steel got ruined by the lack of knowledge about proper heat treatment in the early time of it's use as knife steel and "China stainless" that claimed to be proper 440x steel.
It cuts better and longer than low alloy steel meaning it makes a better knife.
