Most days I was wearing nothing more than a baselayer top (long-sleeved because UV is super strong in the mountains), zip-off lighweight trousers and trail runners. On the summit days I was in head to toe goretex for the wind, a thick down jacket below that and two-piece composite mountaineering boots.
Even if you're not going that high you'll want at least one set of warm clothes regardless; partly because you'll probably end up doing a pre-dawn hike at some point to see sunrise over Poon Hill or Kala Patthar, and partly for wearing in the teahouses during the evening. Some of the dining rooms are heated but not all and the bedrooms can be COLD (not too bad if have a couple of nalgenes filled with boiled water to keep you warm overnight). I think all of the teahouses provided bedlinens but I don't know if you'd want to count on that, I had a sleeping bag.
Other than that it's mostly just whatever you'd bring on a long hike. Meals are available at the villages but you might want to bring trail mix or snacks.
Wet wipes because hot showers are expensive and not that hot.
If you're bringing electronics then a power bank is recommended. Most places with charge X amount per device per hour or Y amount to fully charge your powerbank, it's good to have the option of either depending on price. A lot of people also bring solar chargers and just drape them over their packs as they're hiking.
