The notorious bindweed easily grows 2m deep. That's deeper than most trees.
I never managed to dig fully the roots of a sorrel, a chicory, a hollyhock, a horseradish, ... and that means they go way deeper than 1m.
So... if your shrub/tree has roots that reach 1m deep (that's half of your height), they can easily reach water while the annuals that merely reach 30cm just die out of thirst.
Effectively, for the last two summers my "lawn" was all sorrel, chicory and dry grass&clover (and somehow still alive fox-and-cubs).

For now, I keep it just for the butterflies & misc insects that crowd it.
