Sisla'gwa'taqan (siss-laa-gwa-tah-gan) not to be confused with Luskinikn, at least in my family, are the best fucking johnnycakes or corn pancakes.
You take yellow corn meal, the fine stuff, and mix it in a 1 to 1 ratio with boiling water (1 cup meal 1 cup water). In the dry corn meal before the water you include like a pinch of baking powder if you have it, though you dont need it, a tablespoon of oil or melted pork fat, salt (not if you use saltpork fat), and a tablespoon of sugar or maple syrup. You let that sit like 5 minutes and the corn meal expands and gets soft like grits. Then stir in milk (or water) until its pancake batter thickness and fry in a hot hot skillet with no shy amount of fat of your choosing (i like butter or saltpork fat)
The outside is crispy golden and caramelized, and the inside is soft gooey grits.
Have that shit with some fayots au lard or bacon, goddamn
