I'm looking to purchase a knife in the more expencive/semi expencive range for the first time. I've looked a lot into steel types and I'm still very much in doubt weather to go for a Stainless (14c28n) or one of the popular high-carbon steels (like O1 or O2).
My question is for those who have experince with high-carbon knives: Just how easely do they rust? I know that they won't if you wipe them down after use and oil them from time to time, but on the other hand i live in Scandinavia which equals a lot of wet weather and I don't wan't a knife that I have to be too carefull about. What's your experiences?
