The Zefal Traveler 80 isn't that big and I wasn't a fan of it, I upgraded to Ortlieb 2*20L panniers. Mostly food in the frame bag.
The amount and size of bags you're gonna need will depend on the bulk of your base items (mostly the sleeping setup) and the amount of food you want to bring. On one hand of the spectrum you have so called "credit card tourers" who sleep in hotels and buy food in restaurants so they don't have to pack a lot. On the opposite end you have tourers that wild camp and pack a lot of food to be self-sufficient for like 1/2+ weeks, bringing small foldable solar panels to recharge their phone etc... That requires more bags, and this year I'll be on that end of the spectrum.

I you've never been touring/bikepacking before I'd suggest getting a cheap used one and try a few nights with it just to see if you enjoy the experience, and if you do you could upgrade the components on the bike if it fits you (that's what I did) or buy a brand new expensive one.
