And because they're so relatively simple, and relatively small, you can afford something very high end for a relatively low price. For a low 4-digit price you might be able to get a damascus blade hand forged by a master craftsman, with a handle made from the fossilized ivory of extinct megafauna.
If you wanted something to that standard and material fancyness but in a car (or a gun, a watch or heck even a washing machine or dinnertable) you'd need to spend orders of magnitude more money, if one is available at all. but with knives there's so many makes that there's something for everyone.
and even if you don't go quite that fancy there's all sorts of cool stuff like titanium and supersteels and clever mechanisms and perfect machine finishing. so much stuff to obsess over and pick what you like best. is it necessary? no, but it's fun. perhaps the fact that we can get a perfectly serviceable Mora for ten bucks means that we're all the more free to play around when we get to the high prices.
