I might be over-spacing the tomatoes, but I had the same situation you had where they form an impenetrable jungle and lots of fruit ends up getting lost. I've been doing this for four years and I always overplanted - so I'm gonna overdo it on all the spacing this year and see how it goes. For the sake of reducing disease and fruit loss, I am planting everything above the necessary spacing requirements and working down towards the optimal spacing, rather than working up. I figure a smaller number of plants that have all the space and nutrients they could ever need are better than weedy ones with poor air flow.
That mulch sounds interesting, I might see if I can try a tarp or something similar to do that. Would be easier to remove than mulch if I change my mind about it.
