Turn off the heat source and allow the water to rest a minute before pouring it over the grounds.Basically get water to a hard boil, then let it sit off the fire until it stops bubbling, it'll be just about 210 then. And it'll lose heat while pouring it through the air.
I'd rather have the water be too hot than cold, because anything lower than 195 gets really weak if you try to brew a lot.
Keurig machines brew at 192 max, so they are only good for the 6 oz brew.
