From 1500 to about 1870, almost all pipes were clay. It was waterproof, cheap, light, plentiful and easy to clean.
After 1870, briar pipes started to come onto the scene, with cobs showing up in America around the turn of the century. From there on, most everything goes, though Europeans usually smoked briars and Americans had a mixture of briars and cobs.
