Being into knives and sharpening as a hobby doesn’t mean I don’t use them though. If anything it’s all the more reason to not be afraid to use them, if I fuck up an edge doing stupid shit, I can just fix it later.
All I’m getting at is, you’ll find your ones work a lot more effectively if you put a little more time into putting an actually sharp edge on it. The primary purpose of a knife is to cut, you cut with the edge, having a dull knife is stupid. Especially when it is so easy to not have a dull knife.
