You SHOULD be able to do the same with organic potatoes. I know store bought ones (maybe including the organics) get sprayed with an inhibitor that prevents eyes from forming. I was going to try that too in the fall. You would know, by simply slicing the taters with a few eyes on each slice and keeping them in a paper bag. If they start sprouting you're good. I wouldn't put them in the ground until you know though, so they don't rot and get disease in your soil or so I'm told.
And the same thing for green onions. I use the greens and bury the bulbs. They lasted this years mild Texas summer in a small pot just fine.
