It's also pretty fucking obvious you don't know how to brine and smoke fish or meat properly since Kosher salt is the only salt you should use for that - the size and shape of the crystals make it super efficient at drawing fluid out, and the mild flavour profile means that it's not salty as all hell when you come to eat your preserved foods.
