Deer hair contains a lot of air in little holes making it buoyant which is why it is used a lot for topwater lures like poppers.
Also the way it flares (new word in my vocabulary) makes it suitable for trimming to all sorts of funky shapes (see pic). Was mainly an issue before the advent of foam heads I suppose but it sure as hell is prettier than a foam head.
