Features like rivers, gradients, etc depends on the mapset you install. I run 24k Topo on the sled, CityNavigator everywhere else (truck and moto). There's free stuff out there, give it a shot, if it works for you then awesome.
Sending waypoints/tracks to and from the receiver can be done with a couple tools. Garmin's BaseCamp does a pretty good job with it, but you can do it with other tools (I use Google Earth, GPSBabel, and LoadMyTracks).
Garmin's pretty much "the standard". Great hardware, and the most supported firmware/software.
I run with a 76Cx. >pic related, this afternoon. I don't recommend any less than "C"olor and E"x"pandable memory (MicroSD card slot). IMO the new stuff kinda sucks (78, 62 series). Options like touch-screen vs. buttons, buttons-over-screen vs. buttons-below-screen, internal vs. AA batteries, external power options (4-pin 8-30VDC on the 4-pin round, vs. Mini-B USB) are largely up to you for your application.
