This is plainly false an is a misinformation campaign designed to sell underquilts and keep the "I use what I have" type of people out of hammock camping (please don't say "hammocking").
The truth is, an underquilt is a smaller sleeping bag. What you should be doing instead, which at least works for temperatures down to freezing, is wrap a sleeping bag around the hammock, then zip and cinch the ends down.
This gives you total wind protection (in conjunction with a tarp), peak comfy, and you don't have to bring a pad. What is bad about that?
I haven't tested my setup in freezing temps yet, but due to the increased vacant area on top and behind you, I'd imagine that additional insulation would work very well.
This setup is honestly better than an underquilt/sleeping pad + sleeping bag setup. It is equally as insulating as an underquilt + topquilt, perhaps even more so. It is far more comfortable than a sleeping pad.
I think the most important things are working with what you have, and the ingenuity that comes with.
Please, /out/, everything we do is about thinking outside the box. Think outside of the traditional hammock camping LARP. Use a sleeping bag the correct way.

tl;dr for my lurkers: don't invest in an underquilt if you have a sleeping bag already. Just repurpose your sleeping bag as an underquilt.
