The ideal bikepacking food is what I call the "HyperMuesli":
Oats, Nuts/Seeds, Dried Fruit and any combination of protein powders, powdered herbal supplements such as beetroot, cacao, maca, cinnamon et cetera, and fresh fruit all chopped in a bowl and add hot/cold water (which one would be carrying anyway) for a delicious, mega nutritious, cheap and easy (just wash bowl/spoon afterward) meal for calorie-demanding days. Been eating them twice daily for the last six years.
Waterproofest of all tents, then you will have some chance of only a little water inside. It's okay though, we are not made of sugar and a wet and windy night every now and again builds character!
