Carbs are carbs, fat is fat, protein are protein and sugar is sugar, it's all about eating enough calories each day to not be in calorie deficit, which can be pretty tricky for thru hikers.
You don't want the stuff you're eating to be mostly sugar too, ideally you want fats and carbs to be your main fuel. Enough prots for your muscles and some sugar for energy boosts.
I do check every products for any dodgy/risky additives though. I refuse to buy anything that has any, so for example I don't eat dried sausages because they're always full of sodium nitrite (E250) which is well known to be carcinogenic. It sucks because that's a good source of protein and fat. I could buy some jerky or other kinds of dried meat that don't use E250 but it would be way too expensive for me. Hopefully when I add fishing and hunting small games into my outings I'll have a natural and healthy way of getting protein on the go.
