Unsolicited advice as ive butchered a buttload of large animals;
Place 4 logs under him on the ground and split the chest up through the brisket, splay out the legs and saw off the extra. Peel skin to the ground. split the pelvis and start the vents before tracing up the belly and splitting the ribs. Start lifting from the rear get the vents rolling out and then lift up more and it should all roll out with the best odds of not getting any shit inside.
Rarely have blood past my finger tips and rarely have to wash regardless of shot or amount of mud on the belly.
the only downside is if you like organ meat because you can have gross shit fall on them.
