The Appalachian mountains are so old that they're super eroded and the soil is deep so it eventually becomes hardwood forest everywhere with no variation. Not to make this a west vs east thread, and I'm a east coastie myself, but the west is gelogically younger so there's still lots of bedrock outcrops and thin soils everywhere that break up the landscape.
Quarries are actually really beautiful once they start becoming naturalized. And they provide important rocky and dry ecosytems that would otherwise be rare.
