If the plants are alive you have the option of leaving them whole and putting a polytunnel over them if frost it coming so you can extend the season if you want. If you want to start planting again, it will just depend what your season is like. For me, I have one growing season to get everything done, so I make sure to extend it using a polytunnel. Once I can't cheaply keep extending it, I rip the plants and roots out, prep the beds for the next crop then plant cold weather crops under a tunnel.
