That being said, you should be grow the same things as you'd normally be growing. I assume you wish to have more food security. Grow what you eat and what can grow in your climate. That's really all you need to do and always the proper answer to anything worded similarly as, "lol what to grow?"

Those cultivars used in industrial farms to reach grocery stores have some of the longest dormancy periods of all potato cultivars. Why spend extra money on treating them when you can just grow one that stays dormant as long as you need?

You should compost a portion of the carcasses and use Black Soldier Flies to break down the rest. The BSF can break down carcasses pretty quickly and they self-separate from the mess for you into a container.
