Between Bryce and the I15 is Cedar Breaks (pic related) which is worth the drive to the lookouts at the top. Not a lot of hiking or exploring to be done but definitely worth checking out on the way.
Between Bryce and Capitol Reef is Escalante Petrified forest and Hells Backbone which are both also very cool.
Zion, Bryce, and Capitol Reef are all close enough together that as long as you're making the trip to one, you might as well go out of your way and see another, especially since none are terribly big parks.
My rec for Zion is the Kolob Canyon entrance. Prettiest part of the park imo, right off the freeway exit, and like one tenth the crowds and no meme shuttles.
