>>2604751As the other anon said, bleed it out first. I like to filet 'em and leave the skin on. Cut slices down to the skin along the entire filet, leaving only narrow gaps between each slice. This way the bones will be less of an issue once you cook it.
Season generously from both sides with salt, pepper, sweet paprika powder and garlic paste. Let it sit with the seasoning for at least 30 min. Toss it in flour, put oil and butter into a pan, fry until the skin is crispy.
