If you want difficult terrain check out Linville Gorge wilderness area. It's been a couple years since I've looked at the map, but I seem to remember plenty of trails.
One trip I did there was 3 days of rock climbing around Table Rock, then hiking down and spending a night at the bottom of the gorge, then hiking up the other side to Wiseman's View. It was pretty tough, but a great hike. Spectacular views and rugged terrain. We saw one other hiking couple in the gorge and only a hand full of climbers.
