I carved my handle to get a better pinky grip and a small choil. Fits my hand exactly. Can't do that with plastic.
And don't be scared of the carbon blades, they won't instantly rust on you. If you get surface rust just clean it off. Or do a forced patina to protect the blade a bit more. But honestly you don't need either, just wipe the fucking thing and don't put it away wet.
