Weimaraners and Vizslas are also worth looking into
These dogs should all be able to handle the climate and could go with you off leash
Personally I have a foxhound who I take hiking with me. He’s fantastic and could go forever. I love scent hounds but you can’t trust a hound off leash since they’ll be off on a scent before you know it.
If I bought a dog for hiking it would be a GSP, I know some people who hike with them and they’re fantastic.
Shelters here (American Southeast) are full of hounds that hunters lose or abandon and never bother to collect so thats why I have a hound instead
