OP you absolutely need good ground insulation even in summer. Air mattresses are comfy but very prone to deflating or getting punctured and becoming useless in the middle of the night. Get some good foam roll mats that are practically indestructible for the same price.
As for a cover, sleeping bags are best if you will use them regularly, a couple of big, quality blankets are ok for summer, even a quilt if you are car camping. You may well end up sleeping on top of whatever you take, but take something in any case.
