If you have a specific project that you think the belly scales will be cool then fine, but normally were going to cut it along the belly.
You can pre-draw a line down the center of the belly if you want to be precise but generally most will be tossed- you'll just sew on the edge but this is you're choice.

They don't connect in the middle so they can expand and swallow food.
So if you dig those scissors in you're going to slice into all It's organs and make an absolut mess.
Run the scissors up along the skin, it will pierce the connective fatty tissue. Pull it up and away from the muscle.

I did not cut the muscle or the tissue between the hide and body- you can still see a thin film that separated the organ cavity from the skin.
