>Trifoliate OrangeThe only truly cold-hardy citrus that may or may not actually be a true citrus depending on which scientist you ask. Hardy, thorny motherfuckers with sour fruit that can be used as a lemon substitute. Fruits are seedy and individuals can vary between tasting okay-ish to being almost inedible, such is the price you pay for having fresh citrus in zone 7. Has a dwarf variety with twisted limbs and curved thorns called Flying Dragon, which looks awesome in winter.
>Cornelian CherryNot actually a cherry, a dogwood with edible fruits that taste like a pie cherry and a cranberry had a baby. One of the first trees to flower in spring, so if you ever get bees they're worth looking into.
>MayhawA species of hawthorn that has tart little fruits that make one of the best damn jellies in the world.
>PlumsNot uncommon at all but you didn't mention them, so I'm saying get yourself a plum or two. Cultivated plums come in European and Japanese varieties, but there's also native American plums and beach plums that make killer jelly.
Good luck with your fruit!
