An O/U is simply a better choice for hunting and sport shooting, which is the primary purpose of a shotgun (handguns being a better for in-home defense and rifles for outside of the home) and the greatly improved weight balance of an O/U results in a shotgun that swings and points much cleaner, making shots easier and more accurate.
And you don't have to drop big money on an O/U, there are plenty of good quality and affordable O/U shotguns out there, for example;
