As a butcher by trade, I'd feel very comfortable using the flatter ground Bush HD. I'm fairly confident it would serve my needs as a game processing knife and would still serve for basic notch carving or making feather sticks. I'm not fond of useless ricassos near the working edge or recurves, I prefer a single gradual curve that makes slicing cuts easy, fortunately if this shape isn't your cup of tea there's another knife out the that is, I like this blade shape just fine.
