Bulk food. Whole wheat couscous cooks in like a minute. Bulk raw nuts and low sugar snack oats with seeds and dried fruit mixed in. Hummus powder. When in town, eat more calories and produce. Bring an army can opener for gas station spinach cans, etc.. Bulk rolled oats (breakfast). Quick 6 minute cook rice meals and mashed potatoes, as seen in image (less healthy, but sold everywhere).
For all the dried stuff, go to store that sells bulk food in bins, by the pound (ex. 1 lb almonds for $11.99) then mislabel the items to something similar looking (ex. 1 lb pinto beans for $1.99), double bag, then go to cashier who looks like wouldn't give a fuck, and making distracting conversation while they ring you up, or ideally, self checkout.
