I love spare clothes, It's the first thing I'm adding to mine since I manage to get more space/weight. It's not only for body warmth. For CBRN agents contamination the first recommendation after getting to safety is to get a shower and discard contaminated clothing. Also when put in Go Bag in case of sudden emergency like house fire or earthquake you can just grab bag, phone, wallet and fuck off in your pyjamas
I like the drybags to organize things by colors

Dunno about you but I never really got problems with water (except for that one hike on the desert), was fine being hungry but fucked myself over countless times with exposure
I would also consider the following items:
A bottle of water (or if you're using it for out activities a lot single wall metal bottle)
Multitool or field knife (even if you have tools in your car)
Marine ration or even better emergency ration (both designed to be stored in lifeboats so they handle car temeperatures fine)
Powerbank
