I have been trying to cut down on my meal complexity somewhat, I realized after riding all day the last thing I wanted to do was make some complicated ass instagram meal. Some might apply to hiking but I know others are heavier than wanted and I also have the benefit of ice for multi day trips.
I started out going on Outdooreats and looking at all their free recipes. Most of their recipes are a bit more complicated than they need to be because they need to look photogenic, but many of them can be trimmed down to a few easy ingredients. Another thing I did was start thinking of foods that can be used in several ways.
>peanut butterCan be added to ramen or other noodles, spread on bagels/tortillas, or just eaten plain.
>Instant rice/ boil in bag riceIve been using this more lately as its a pretty easy way to get a filling meal after riding all day. I usually just do rice, canned chicken breast, onions sauce, and any seasonings I bring. But, its rice so you can really do whatever the hell you want with it.
Ive also found there is a decent amount of box meals out there that only require water and a protein. Or some others that say to use butter or milk, but subbing in just plain water hasn't effected the taste enough for me to care. Definitely experiment at home before taking it out, some really need the dairy and those will be a major let down. For protein I usually bring canned chicken/tuna, spam singles or diced ham.
