Otherwise Gossamer Gear packs are a good balance between toughness, light weight, “snippability” (remove extra features) and looks.
An unorthodox option I went with was an Alpkit Gourdon in 30L, snipped extra webbing and toggles and removed the pleather sections to get it down to a very cool 240g for robust drysack with side pockets and straps (don’t need hip belts).
You might consider giving up on the dream of a completely waterproof bag and just use a packliner, will be cheaper, lighter (unless you go full cuben) and more available if it breaks
