If you really want to go off the beaten path and take a big risk, try raising human consumable crickets. Odds are that insect consumption isn't going to become the next big thing but if it does, even with hipsters and foodies, you'll be well ahead of the market. Just be sure you raise them to be human consumable. The crickets you find at bait shops are raised on crap that doesn't matter when you're using them to fish with.
