i havent gotten enough at the same time to make a batch of sauce or anything due to shitty weather.
do wash your hands.
do sterilize your containers and wash tools. dunk containers in boiling water or pour it into them, or bake in oven a while.
do use something to keep things submerged if fermenting, or an airlock to vent gases and keep air out of container. i used alu foil to keep things down.
do use gloves when working with hot peppers, and dont touch your eyes.
