I'm in western ky, paducah.
Lbl is pretty cool, there are gravel roads crisscrossing most of it, so it's not bfe if you want that. The lakes are great though and the scenery is ok. People will leave you alone most times, but rangers are errywhere.
Red River gorge was previously mentioned in this thread and is great, but have not been in almost 20 years.
You could re-enact deliverance out in eastern ky, that's real hiking country, but I don't go over there.
Most of the time I camp in southern Illinois because I don't think people should have to pay for camping. Garden of the gods is fantastic, as are bell smith springs (pic related), Jackson falls, burden falls, fern clyffe.
