Braindead and simple. Fat/grease is the enemy of dehydrated and will go rancid. So that's why you need to try and remove as much a possible
Can also make hamburger jerky. Different texture than usual jerky. Could cut it up and add to food. Though I feel it's a waste of jerky and would rather just eat it for a snack/light meal instead.
