Summer day hike? Lightweight, protein and sugars. Granola bars, trail mix, beef jerky, etc. Sandwiches are easy and safe. Lunchables work, but that leaves a lot of trash to pack out.
Overnighter? Might want to bring a camp stove, or make plans for a fire to cook something on. Hiking, I found boil-in-bag meals to be a godsend. The morning of, crack 2-3 eggs into a measuring cup, toss in some cubed ham, onion, green pepper, salt/pepper, bacon, cheese... whatever floats your boat... dump it into a quart-size baggie, then roll that up and stick it in a widemouth nalgene bottle.
Set up your stove (or start your fire), put some water in a pot (creek water is fine, just used as a coupling between the bag and heat source) and toss the baggie in. Give it a few minutes once the water's boiling, and you've got a delicious omelette.
I did a -lot- of these when I was hiking.
Multi-day, you'll want to bring a few options. What sounds good when you're packing might not sound good innawoods.
