You can legally camp anywhere in the National forests, of which there are plenty, as long as it is not some special protected reservation area, which will be clearly marked. We now have two trails going through the Baltic states, so if you have time, you can visit Estonia and Lithuania as well.

However, I would suggest planning a trip in the summer, since the Corona thing is still quite bad here and the borders are pretty much closed at the moment. I think by the middle of the summer the situation will be better and there would be less of a risk of getting stuck in quarantine for weeks.
