I usually use them when I'm not totally sure if a squirrel will stay still when it hears my shot or I'm not totally confident in my stability. Of course, I still need to be stable, but sometimes I doubt I can hit a walnut sized target. Lung shots can take quite a while to kill, so they may have a while to run off and get out of sight before dying. Take a shot, track it visually, and listen where it is using the sound of the leaves. Don't run in guns-a-blazing as soon as it drops. I like headshots the most, but lungs can work just as well as long as you know it won't just hide and die out of reach.
