good front rack with a platform, big saddle bag and a top tube bag. the frame bag is nice but not that necessary.
with the load that is seen in the pick you could probably comfortably tour for 3 - 4 weeks.
I love my pizza rack for real. apart from touring I carried the most ridiculous stuff on it. works best when you just strap some bungee cord to it.
I can guarantee that if you get creative you can carry anything you find with this thing and some bungee cord.
if you don't have mounts on your fork use p-clamps from the hardware store.
I encourage anyone to try it, just for the fun of it.
with a bike similar to what I outlined you can ride any trail that you that you can hike without crossing into serious mountaineering territory or traversing deep snow. but you really shouldn't underestimate the capabilities of a bike. I crossed rivers, swamps climbed serious mountains (for European standards) and bunny hopped off rocks on my way down.
also those things are stupidly customizable, so if you are into that you can tweak your ride to be just right for you and your conditions.
